I believe you have to import the same image twice to make it “bleed” over two pages.
With your two page spread, simply edit the image box on the left page so that it’s the width you want, and move it towards the centre of the book. I usually leave a half-inch gutter because these books don’t lay flat.
As long at the image height is the same on both image boxes, Booksmart will not resize the image when you drag it onto the page, but it will allow you to move the images to the left or right to get the framing you want. You can add a text box on the left page as well while you’re editing the layout.
