Multiple Categories?
Is there a way to list a book under more than one category? For example, I am about to publish a book of photos and poetry. It would be appropriate to list it under both Arts & Photography as well and under Poetry, but it seems that I can only pick one?

Well, you can only define one category that best fit or describe your book. You may also add some few essential keywords under Tags as well. So you can put poetry in tag section.
Some people don’t include tags in their book description. However, in my humble opinion, it is always a good idea to have few keywords in Tag section. The purpose of tag is for search queries in Bookstore search on Blurb site.
